Ingredients:
For the chicken:
- 2 chicken breasts, sliced
- 2 tbsp Clemente Jacques Chipotle in Adobo 210g
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp salt
- Juice of 1 lime
For the tacos:
- 6 small corn tortillas
- ½ red onion, finely chopped
- 1 avocado, sliced
- 50g crumbled feta cheese
- Fresh coriander, chopped
- 1 lime, cut into wedges
Method:
- Marinate the Chicken: In a bowl, mix the sliced chicken with Clemente Jacques Chipotle in Adobo, olive oil, cumin, smoked paprika, salt and lime juice. Let marinate for at least 30 minutes.
- Cook the Chicken: Heat a pan over medium heat and cook the marinated chicken for 6–8 minutes until fully cooked and slightly charred.
- Warm the Tortillas: Heat the tortillas in a dry pan for about 30 seconds on each side.
- Assemble the Tacos: Divide the cooked chicken between the tortillas. Top with chopped red onion, avocado slices, crumbled feta and fresh coriander.
