Creamy Potato Salad with Kuhne Pickled Gherkins

Want a simple and tasty side dish? This Creamy Potato Salad with Kuhne Pickled Gherkins 2.45KG is fresh, tangy and super easy to make. It’s perfect for picnics, BBQs or even a quick lunch. Easy enough for kids to help make too!

Ingredients:

  • 500g baby potatoes
  • 4 Kuhne Pickled Gherkins, chopped
  • 3 tbsp of mayonnaise
  • 1 tbsp of Dijon mustard
  • 1 tbsp of white vinegar
  • 2 spring onions, chopped
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper, to taste

Method:

  1. Cook the Potatoes: Put the baby potatoes in a pot of boiling water. Cook for about 15 minutes until they are soft. Drain and let them cool.
  2. Make the Dressing: In a large bowl, mix the mayonnaise, Dijon mustard, white vinegar, salt and pepper.
  3. Mix It All Together: Add the cooled potatoes, chopped gherkins and spring onions into the bowl. Gently mix everything so the potatoes are coated.
  4. Finish: Sprinkle with fresh parsley before serving. Enjoy cold or at room temperature.
