Ingredients:
- 2 chicken breasts, cut into bite-sized pieces
- 3 tbsp all-purpose seasoning
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 1 small onion, chopped
- 1 tbsp garam masala
- 1 tsp turmeric powder
- 200ml tomato passata or chopped tomatoes
- 165ml Chaokoh Coconut Milk 165ML
- 2 tbsp plain yoghurt
- 1 tbsp vegetable oil
- Fresh coriander, for garnish
- Cooked basmati rice or naan bread, to serve
Method:
- Season the Chicken: In a bowl, mix the chicken with Dunns River All Purpose Seasoning. Let it rest for 10 minutes.
- Cook the Base: Heat oil in a pan over medium heat. Add chopped onion and cook until soft. Add garlic paste and ginger paste. Cook for 1–2 minutes.
- Add Spices: Stir in garam masala and turmeric. Mix well.
- Add Chicken: Add the chicken pieces and cook for 5–6 minutes until browned.
- Make the Sauce: Pour in tomato passata and simmer for 5 minutes. Add Chaokoh Coconut Milk and yoghurt. Stir and simmer for another 10 minutes until the sauce is creamy and the chicken is cooked through.
- Serve: Sprinkle with fresh coriander and serve hot with rice or naan.
